Garlic Mashed Cauliflower
Ever craved mashed potatoes but didn’t crave the carbs? Try a yummy garlic mashed cauliflower as a substitute!
What you need:
1 head of cauliflower
2 cloves of garlic
Turkey bacon
Scallions
Salt and pepper (Optional)
Bring water to a boil and cook the cauliflower in a steamer. In the meantime, chop the garlic into small pieces. If you do not have fresh garlic, you can use garlic powder. Heat up three pieces of bacon and chop the scallions. When the cauliflower is soft, transfer to a bowl and mash it generously with the garlic, salt, and pepper. 
Depending on your preference of the texture, place into a blender or food processor on high. Sprinkle with sliced bacon and scallions and serve immediately.
Enjoy!

Leaving my family, all of my friends and where I grew up is a little difficult. Everyone in Georgia has made the transition very smooth and I am grateful. In the last week, my roommates and I discovered that we all love avocado and we all love smoothies!

This morning, I decided to make a very simple and frothy smoothie to enjoy.

Frothy Avocado Smoothie

Half a cup of almond milk

1 avocado

1 banana

Lots of ice cubes!

Blend and enjoy. Stay cool, kids!

Today’s breakfast was very simple! I threw an egg over half a slice of avocado, sautéed some peppers, mushroom and spinach and had two slices of turkey sausage.

Here’s a quick snack to boost your energy in the middle of the day or serve your guests at your house warming get together! I don’t like to use mayonnaise and avocado is healthy and beautiful - so that’s my option!

Crab Stick Avocado Spread

25 pieces of gluten free rice crackers

3 crab sticks

1 avocado

1 slice of onion

Juice from 1/2 a lime

Salt & Pepper

Chop up the ingredients and throw into a bowl. Sprinkle salt, pepper & lime juice as you please and mash everything together. Put a little bit on each of the rice crackers. Serve on a cutting board - guaranteed to be a hit at your party! 

For my girlfriend Morgan’s birthday, I decided to whip up some Green Tea Rice Krispy Treats! I shaped most of them like little onigiri (come on, rice AND green tea!?) and shaped one big ivy, since she is a member of Alpha Kappa Alpha Sorority, Incorporated!

The recipe is super simple and when you read this, you’re going to say DUH! But seriously, for a healthier option of rice krispy treats, go for green tea. 

Green Tea Rice Krispy Treats

3 tablespoons of butter

4 cups of Rice Krispy cereal

1 bag of marshmallow

3 teaspoons of matcha powder

In a non-stick pan, melt the butter in low heat. Add the marshmallow, stirring rigorously to avoid browning. Slowly add the Rice Krispy cereal and make sure it is coated with the marshmallow. Soon you will start to see a beautiful green color.

I threw everything on a wax paper and let it cool for 5 minutes. That way it was still warm enough to shape. When I was done, I bedazzled it with pink sprinkles. Safe to say, Morgan loved them!
